What is the minimum working space behind bar?
That is rather subjective, and certainly dependent on how much room you have to work with. My first bar I built with a minimum amount of room, so I only had 24″ to work with. It was workable, but my latest build was a full 30″ and is very comfortable. Maybe try setting up a box or table to replicate your bar, and space them at different distances to get the real feel for it and go from there.
20″ is incredibly tight.
I recommend a minimum of 32″, but if less works for ya, go for it.
